summery nectarine salad

This nectarine salad is light, bright and delicious.  Perfect for warm days, it has a wonderful combination of sweet and tart and bold.  This salad has some surprising ingredients, but they work together perfectly.  It feels a little sophisticated (perfect to bring to a party), and could not be easier.  Literally 3 steps.

The quantities below serve 4 as a side.  Double or triple to bring to or serve at a party.


4 nectarines sliced in 8ths
zest of 1 lime
2 tsp freshly squeezed lime juice
1/2 cup blueberries
1/2 cup cucumber halved and sliced thinly
1/2 cup black grapes halved
1/2 cup red onion thinly sliced
2 tbs finely chopped mint

  1. Thinly slice red onion.  Place slices in a medium-sized bowl and cover with cool water to soak for 10 minutes (this mellows the harsh bite of onion).
  2. Zest and juice lime and cut up fruit.
  3. Drain onions and toss all ingredients in a large bowl.
  4. Serve immediately, leaving enough room on your plate for other people’s dishes, too.
